Le Selve di Vallolmo

Description

The farm is situated in the attractive Tuscan countryside in an old country hamlet that also offers accommodation. The real virtue of this farm is the total control of the production chain: the Grigio del Casentino pigs are raised in the Foreste Casentinesi National Park and processed in-house. The top cured product is the Slow Food Presidium Prosciutto del Casentino, but the farm also produces Tuscan salamis, finocchiona, fresh and cured sausages, sambudello, and capocollo.
