La Bona Usanza

Description

Verdicchio is not only home to Marche's most famous white wine. It's also a land of pulses, including the Slow Food Presidium Serra de' Conti 'cicerchia' pea and the 'solfino', an ancient bean in the region that's been recently discovered and revived. These, along with chickpeas, are cultivated by La Bona Usanza. Founded in 1999, this cooperative produces both dried pulses and variations transformed into pastas, soups and ready-to-eat snacks. These same legumes, together with wheat, form the basis for their Cicerchiole, wild pea crackers. They also offer Lonzino di Fico (a fig sausage), 12 File Quarantino corn meal and canned snacks.
