Description

The producer owns an organic breeding program for raising cinta senese pigs, which live free range and semi-free range at Aia della Colonna, in Roccalbegna, feeding on grains and vegetable pro-teins. Using their own pork, and that of black pigs raised in upper Lazio and lower Tuscany, they produce two lines of cured meats, cinta senese Biamiata and black pig Nero Etrusco, which com-prise prosciutto, salami, capocollo, lardo, guanciale and pancetta. Organic processing takes place at Gam, in Montefiascone.
