This dairy producer was founded in 1877 in San Giuseppe Vesuviano by Gennaro Auricchio (it was he who invented "the recipe" that made Auricchio provolone unique and recognizable the world over). Today the founder's grandchildren, the fourth generation of family, manage eight plants in Italy while overseeing a complete range of classic Italian cheeses, all produced with traditional and artisanal methods.
