The Casetta family have created an eco-friendly closed-chain model, with pigs reared on the family farm, a processing facility, resources with minimal environmental impact, and a limited edition line of organic charcuterie. Cured and cooked charcuterie of traditional inspiration includes coppa, guanciale, brawn, trotters, and cotechino, and exclusive creations: double cured pork fat; Luiset pancetta with aromatic herbs; roast loin; and guster, a Piedmontese-style artisanal frankfurter.
