A few years ago, the Capricci' line was created, which includes Arroganza, the company's first cooked ham, strictly high quality, cooked outside the mould and tied by hand. It is characterised by a light initial roasting before moving on to classic steam cooking. It is made in a sweet version, aged over beech embers, and with truffles. Its delicacy has become a trademark, elegant with light notes of spices and aromatic herbs. Its succulence, measured flavour and balance are the characteristics that distinguish it.
