Ciak – In The Kitchen

We’re at Valentino Ugolini’s place, one of the many youngsters trained under Umberto Bombana, a capable maestro of launching many young Italians in Asia. In the Landmark shopping center, Ciak is a bistro pizzeria that focuses on traditional cuisine, including large cuts of meat for table sharing, and classics such as carbonara, which was very popular during our visit. The pizza is thin and fragrant, the result of a blend of 5 flours and a leavening period of at least 36 hours, baked in an electric oven, the result reveals good friability and attention to raw materials.
