This is, of course, because of the difficulty to get typical products, customs controls, prohibitions. Fabio Nompleggio, the chef of Cèpe, the restaurant of the Ritz Carlton on Financial Street, was able to redesign with imagination a series of italian classics. A dining hall with soft lights, including a private area for special dinners, professional service, wine list with many famous labels (not just italian). We had a revamped amatriciana with broth, dismantled and shocking, as well as the deer meat with tuna fish sauce, perfect in its execution.
