The choice may seem against the grain, but it’s more a way to strengthen and consolidate the ingredient approach that characterizes Bio’s project in all its forms. In the beautiful Bolognese venue (there’s also a Rimini branch) the rich vegetable buffet at lunch, based on the formula “put what you want in your plate and then pay by weight”, is now also available in the evening, as an alternative to a menu which has become smaller and from which pizza has been removed (sinfully, alas!). In the first place, therefore, is not the creation of recipes aimed at composing a specific menu, but simply the ingredient, the palette of flavours and combinations that is born day after day depending on what arrives in the kitchen. All always 100% organic, with wines, beers and accompanying cold pressed juices. Service is kind and generous with lending advice.
