Time for changes for this delightful place at the foot of Montmartre, already awarded as Pizzeria of the Year by our Top Italian Restaurants guide in 2016. Gennaro Nasti, true architect of Bijou, has as a matter of fact left the pizzeria, to devote himself to a new project that will soon come to life. The talented Simona Ena, room manager, remained in command as well as a well-knit team of pizza chefs. The dough, which also includes wholemeal flours, is the result of a very long leavening and high hydration: a good interpretation of Neapolitan pizza art. The pies are fragrant, airy, seasoned with good ingredients directly imported from Italy. Very accurate wine list, 90% Italy, with numerous delights, plus cult labels and bubbles
