Carmine Amarante has brought the Armani Ristorante in Ginza into a new dimension. He has proved to be one of the most talented Italian chefs abroad on a technical level, who was already in the limelight during his positive experience with Heinz Beck. At Armani he is showcasing his sensitivity by mixing fine Italian ingredients and high quality local raw materials. The menu shows a clear change of course in terms of character, identity and flavour complexity. In particular, the ‘tortello alla norma’ is simply excellent, thin layers of dough, tasty and well balanced, just like the delicate turbot with cauliflowers and saffron sauce.
