Description
Avellino fusillo is an ancient Irpinia pasta shape, once prepared by housewives who would mix durum wheat semolina with water and then create the twisted shapes using a knitting needle. Pastificio Graziano draws it through bronze, which gives the pasta its shape and rough, porous surface. Both in the long and short version, it's perfect with robust sauces or ragus.
