Salumi di Mare calls itself ‘the first and only fish delicatessen in the world’, with smoked fish products, processed fish and sauces made fresh by hand, without additives or preservatives. K Group, founded in Montecatini Terme (Sienna) and whose production facility is situated in Borgo a Buggiano (Pistoia), focusing on an original class of charcuterie made with fish: squid carpaccio, octopus salami, swordfish speck, tuna porchetta and bresaola, ‘cold cuts’ wrapped in spices and seeds. Most of their ingredients are from the Mediterranean, while the salt used is from Volterra.
