Progetto Latte – Casearia Agri In

This “taste farm” continues the old tradition of processing ewes’ milk to enhance its generous sensory and nutritional features. Cheese is produced using only milk, rennet and salt, but what makes the difference is a respect for the natural pace here in the lush Tiber valley. Products include Pecorino Romano PDO, Pecorino di Fossa, and cheeses flavoured with walnuts, balsamic vinegar, or wood ashes.
